Nocellara del Belice is a variety of olive that only grows in the Belice Valley in the southwestern province of Trapani in Sicily. The traditional olives have been cultivated since the 8th century BC and are characterized by their bright green color and fleshy fruit. For a particularly gentle treatment, they are harvested exclusively by hand. The rosemary oil marinade developed by Grossmann highlights the unique taste and gives the olives an unmistakable note. Since the Nocellara olive is of such special quality, it is also used to produce olive oil.
