1 piece whole plaice with skin and scales, gutted.
The plaice (Solea solea) belongs to the family of flatfish (such as halibut, turbot, flounder, etc.). The fish is found in the eastern and northern Atlantic and the Mediterranean Sea. The name "Dover Sole" comes from Dover, the English fishing port where most plaice were landed in the 19th century. The fish lives on the seabed, where it is invisible due to its brown skin colour.
Before preparing, the fish should be descaled (the very fine scales can also be eaten), we recommend removing the skin. Can be breaded, poached and of course prepared with other cooking methods.

Each flat fish yields 4 fillets: 2 lower and 2 upper. The meat has a very mild, slightly nutty flavour.
