For this organic wholemeal rye flour, the whole grain is milled, so that all the grain components, including the germ and outer layers, are retained. The rye for the flour comes from organic farming in Germany.

Wholemeal rye flour requires sourdough as a raising agent; this creates aromatic breads and rolls. Mixed with wheat or spelt flour, rye is often used to make mixed bread.
