Dorade Royal
Description
The Dorade Royal, also known as the Golden Bream, belongs to the sea bream family, which has over 50 species in total. It has a high back with a fin set with rays. Its characteristic identifying features are the wide golden band under its eyes and a golden spot on each cheek, which give it the name "Golden Bream". Sea breams grow up to 70 centimetres long and weigh up to 2.5 kilograms. They feed on crustaceans, mussels and fish and have no problem with "bite-resistant" prey, as their grinding and incisor teeth are very strong and can also crack hard shells.
Occurrence
The Dorade Royal's main habitat is the Mediterranean, where it is mainly found in the warmer coastal waters at depths of up to 150 metres. The largest fishing nations are Italy, Greece, Turkey and Egypt. However, the Dorade Royal is now also farmed in aquaculture.
Season
Although the Dorade Royal is available all year round, it tastes best between July and October.
Taste
The Dorade has firm, white flesh with a pleasantly spicy flavour.
Preparation
The Dorade is perfect for cooking whole. To do this, fill it with fresh Mediterranean herbs and a few slices of lemon as desired, then cook it on the grill or in the oven. As a fillet, the Dorade tastes best when fried crispy on the descaled skin.
