Dough Preparation

Mix flour and baking powder together and place in a bowl. Then add 75 g sugar, vanilla sugar, salt, 1 egg, and butter, and knead all ingredients into a smooth dough.

Preheat oven to 200 °C convection. Place the dough in a greased springform pan, press it flat to form a base, and pull up 3 cm along the edge. Prick the cake dough evenly with a fork and pre-bake for approx. 15 minutes at 200 °C convection. Then let it cool.

Cheesecake Filling Preparation

Separate the eggs and beat the egg whites until stiff. Then whip the cream until stiff.

Chef's tip

To prevent the cheesecake from cracking immediately after baking, you can simply let it rest for approx. 15 minutes with the oven door open and the oven turned off.
