Preparation method
Cream vanilla sugar, butter, sugar, and salt with a mixer until fluffy. Then add the eggs one by one and beat until fluffy as well.
Preheat oven to 170 °C convection. Add flour, baking powder, and 60 ml milk to the fluffy mixture and mix well with a mixer. Pour three-quarters of this batter into a greased and floured cake tin.
Add 50 ml milk and baking cocoa to the remaining batter and mix again with a mixer. Spread this dark batter over the light batter in the cake tin and roughly fold it in with a tablespoon. Bake the cake for approx. 45 minutes at 170 °C convection and let it cool in the tin before turning it out onto a wire rack. Before doing so, perform the skewer test to check if the batter is actually baked through. If necessary, bake the batter for another 5 minutes and perform another skewer test.
Chef's tip
If you want your marble cake to be particularly moist and calories are not an issue for you, you can replace the milk with cream. For the cocoa batter, also use melted chocolate, and you will truly fall in love with the taste of your marble cake.
