Ingredients for the Dough
- 360g flour
- 200ml warm water
- 35g vegetable oil
- 5g dry yeast

Preparation
- 1First, prepare the dough for the Bao Buns. For this, mix flour, sugar, dry yeast, and baking powder with a whisk.
- 2Add warm water and oil and knead the dough with a food processor or by hand. It is important to knead the dough for about 10 minutes until it is smooth. Let the dough rise, covered, for about an hour.
- 3Tear the shiitake mushrooms into small pieces along the fibers with your fingers and set aside.
- 4Carrots and cucumber (remove the inner part of the cucumber) are cut into thin strips with a peeler or by hand. Then add lime juice and vegan fish sauce.
- 5After the dough has risen for an hour, divide it into 12 balls.
- 6Cut 12 squares of baking paper (approx. 10 x 10 cm). Place a dough ball on the baking paper and roll it out into a round flatbread. Then lightly brush the flatbread with oil and fold it exactly in half. Lightly roll out the dough again with a rolling pin. (The oil prevents the dough from sticking.) Steam the buns for about 12 minutes.
- 7Meanwhile, fry the torn, lightly salted shiitake mushrooms in a pan with oil until crispy. Don't be afraid to leave them in the pan longer. This is the only way the mushrooms will become nice and crispy. Finally, remove the pan from the heat, add soy sauce, and mix well with the mushrooms.
- 8Place the fried shiitake mushrooms, lettuce, cilantro, lime juice, vegan mayonnaise, and Sriracha into the Bao Buns. Enjoy your meal!
