An exception in this respect is the San Marzano tomato with protected designation of origin. These San Marzano tomatoes are an endangered variety that is not suitable for industrial processing due to its delicate texture and therefore has to be laboriously hand-harvested.
These cans contain real San Marzano tomatoes from Campania. Our producer Il pomodoro più buono has the tomatoes hand-harvested when ripe and then preserves them in a water bath at exactly 100 degrees. There is no better way to capture the tomatoey taste for perfect sauces. The cherry tomatoes from Sicily are given the same care and have all the flavour of ripe, aromatic tomatoes grown on volcanic soils.
