Happy Omami recipe: Grilled Omami Black Pepper Chickpea Tofu with Pineapple Salsa

Ingredients:
Grilled pineapple salsa:
• ½ pineapple – peeled, cored, sliced
• 2 tbsp chopped fresh coriander
• 1 small red onion, finely diced
• 1 red chili pepper, seeded and finely diced
• Juice of ½ lime
• 1 pinch of salt
Grilled, marinated tofu:
• 2 pieces Black Pepper Tofu
• 2 tbsp tomato sauce (or ketchup, but then omit the sugar)
• 2 tbsp sugar
• 2 tbsp soy sauce or gluten-free tamari
• 2 tsp smoked paprika powder
Preparation:
You can either use a classic outdoor grill, an indoor grill or a contact grill. Depending on this, you will have to preheat your grill differently and also vary the preparation time.
For the pineapple salsa:
1. Place the pineapple slices on the grill and grill for about 3-4 minutes per side, until they have nice grill marks and are slightly caramelized.
2. Then cut into small pieces, mix with red onion pieces, red chili, fresh coriander, lime juice and salt and set aside.
For the grilled, marinated tofu:
1. Mix the ingredients for the marinade and set aside.
2. 4. The tofu block is placed on the grill in one piece and cooked for about 5 minutes on each side, until it has a crispy crust but is still soft on the inside. Brush it generously with the marinade on both sides in between.
Season to taste and Happy Omami.
