For the Weißwürste
- 200g Tofu
- 5g Parsley
- 1 tsp ground nutmeg
- 0.5 tsp ground cardamom
- 0.5 tsp ground ginger
- 0.5 tsp garlic powder
- 1 tsp vegetable broth
- 2.5 tbsp Seitan base
- Salt
- Pepper
Additionally
- 3 Pretzels
- Sweet mustard
Preparation
- 1Crumble the tofu with your hands and place it in a bowl. Finely chop the parsley and add it. Also add nutmeg, cardamom, ginger, garlic powder, vegetable broth, salt, and pepper to the bowl and mix all ingredients well.
- 2Add the Seitan Fix to the mixture and knead it in well with your hands. Form three equally sized sausages from the mixture and wrap them in a fresh kitchen towel, cheesecloth, or a cloth napkin so that they do not come into direct contact with the water during cooking.
- 3Bring some water to a boil in a pot. Place the sausages in a sieve and hang it in the pot so that the sausages are in the water but do not touch the bottom of the pot. Let the sausages simmer for about 20 minutes over medium heat.
- 4Remove the sausages from the water, let them cool, and unwrap them. Serve with pretzels and sweet mustard.
