- 2 bunches radishes
- 1 tbsp olive oil
- 80 g goat cheese
- 2 handfuls arugula
- 40 g pistachios
- 1 handful mint
- 30 g butter
- 1 tsp honey
- 2 cloves garlic
- 1 tbsp lemon juice
- Salt
- Pepper
Preparation
- 1Preheat the oven to 200 °C and line a baking sheet with parchment paper. Wash the radishes, remove the greens and roots, and halve the radishes. Season with salt and pepper, add olive oil, and mix everything well.
- 2Spread the radishes evenly on the baking sheet and roast in the preheated oven for about 35 minutes until soft and lightly browned.
- 3Once the radishes are done, melt the butter in a pan and heat until it foams vigorously and turns lightly brown. Add the finely chopped garlic and roasted radishes to the pan and sauté for a few minutes, stirring occasionally.
- 4Remove from the pan. Pour the remaining butter into a small bowl, add a pinch of salt and pepper, lemon juice, and honey. Stir to form a creamy dressing.
- 5In a large bowl, combine arugula, goat cheese pieces, roasted radishes, chopped mint, and pistachios. Drizzle with the dressing and gently mix everything.
