Ingredients
- 300 g chicken breast fillet
- 70 g grated Parmesan
- 2 tbsp extra virgin olive oil
- 70 g yellow onion (finely diced)
- 1 tbsp cane sugar
- 500 g canned peeled tomatoes (chopped)
- 1 tsp dried oregano
- 150 g classic mozzarella (sliced)
- Fresh basil for garnishing
Preparation
- 1Preheat the oven to 200–210 °C and prepare a suitable baking dish (approx. 30 × 40 cm).
- 2Wash the chicken breast fillets, pat them dry, and season with salt and pepper. Heat 1 tbsp olive oil in a pan over medium heat. Sear the chicken breast fillets for 2–3 minutes on each side until golden brown. Then remove them from the pan and set aside briefly.
- 3Add the second tablespoon of oil to the pan, add the finely diced onion, and sauté until translucent for approx. 2 minutes. Reduce the heat, add cane sugar, tomatoes, and dried oregano. Season with salt and pepper and simmer everything together for 3–4 minutes.
- 4Pour the tomato sauce into the baking dish. Place the seared chicken breast fillets on top, cover with mozzarella slices, and generously sprinkle with grated Parmesan. Bake in the preheated oven at 200–210 °C for 13–15 minutes, until the cheese is melted and lightly browned.
- 5Arrange the finished Parmesan chicken on plates and serve with a side dish as desired.
- 6Garnish with fresh basil leaves before serving.
