Preparation method
First, put the chickpeas in a sieve, rinse, and drain well. Peel the red onion and cut it into fine strips. Cut the cucumber and tomatoes into cubes of approx. 0.5 cm.
Place chickpeas, onion strips, cucumber, and tomato cubes in a large bowl. Add the olives and crumble the feta roughly over the salad with your hands.
For the dressing, put olive oil, lemon juice, water, Dijon mustard, dried oregano, as well as salt and pepper into a small screw-top jar. Close the jar tightly and shake vigorously until a uniform emulsion forms.
