The aubergine most likely comes from India and was already cultivated in China in pre-Christian times. The Saracens became acquainted with the nightshade plant in Arabia and probably brought it to Spain in the 13th century.
The aubergine is a popular ingredient in Mediterranean or oriental cuisine. As a tip for preparation, the fruit should be sliced, lightly salted and then left to stand for 30 minutes. This allows the aubergine to release water, which makes further preparation easier. This way, the aubergine can be better processed as part of a casserole, antipasti or even cream/mus.
