Characteristic of the monkfish (Lophius piscatorius) is the large head with the huge mouth and the sharp teeth. With the long "back ray fin" on its head, which resembles a fishing rod, it attracts its prey, which is why it is also called angler. It is most likely named monkfish because of its fearsome appearance. The fish is found in the Northeast Atlantic, the Black Sea and in the area around North America.
Taste and preparation:
The firm, lean white meat of the monkfish is perfect for roasting whole. Ideally, the somewhat firm silver skin should be removed before preparation. Due to the typical intense taste of the fish, it is very well suited to flavouring it with intensive and strong spices or wrapping it in a bacon blanket.
This product comes from a fishery that has been independently certified to the Marine Stewardship Council standard for a well-managed and sustainable fishery.
