In 1992, Scottish salmon (lat. Salmo salar) became the first non-French product and the first fish to receive the Label Rouge quality seal, which guarantees excellent quality and superior taste.
This award requires an officially approved set of specifications with the strictest criteria. These criteria include, among other things, a system of complete traceability from the farm of origin to the point of sale, rearing in accordance with exemplary methods for the welfare of the animals and protection of the environment, and a lower stocking density than for conventional salmon.
The Scottish Label Rouge salmon owes its firm, tasty flesh to the strictly controlled rearing conditions, which is appreciated by discerning consumers who value quality and enjoyment.
