Cod fillets
The firm, velvety white flesh of the cod fillets flakes into tender strips under the fork when cooked. The delicate flesh with its fine aroma is extremely versatile in the kitchen and is wonderfully suited for steaming and poaching, stewing, frying and grilling. Whether combined with spicy Asian flavours, simply tossed in butter in a pan or with a crispy breadcrumb crust with herbs from the oven, cod is always a treat!
Cod can be recognised at first glance by the light lateral line that runs on both sides from the mouth to the tail fin. The average cod weighs about 2.5 kilograms at a body length of 60 centimetres. However, it can grow to a whole metre in length and weigh up to 40 kilograms. To do this, it would have to eat large portions of its favourite food: crabs, small fish, mud and ringworms. It also has cannibalistic tendencies and does not shy away from eating young members of its own species. Cod is known to react very strongly to environmental influences. For example, it migrates quickly to colder regions as soon as the water temperature gets too high for it.
