Free-range chickens are nowadays a special breed that is reared slowly. The meat is particularly tender and mild in flavour. Due to the outstanding quality of French poultry, it is used by top chefs worldwide.
The name comes from the way they used to be kept, where the chicks were kept and fattened in the house, in the so-called "Stube", in order to survive the cold winter.
It can be prepared whole like a normal chicken, but has a shorter cooking time due to its size.
