This high-quality autochthonous grape variety originally comes from the area around Syracuse and is now widespread throughout the island. It is the most internationally known grape variety in Sicily. The grape harvest for the Stemmari Nero d´Avola is subject to very careful examination. Fermentation takes place on the mash for 6-8 days at a controlled temperature of 22-24° C. This is followed by malolactic fermentation with selected bacteria and refinement in French oak barriques for 6 months. Colour: Intense ruby red with violet reflections Bouquet: intense with distinct notes of blackcurrant, wild strawberry and pomegranate Taste: Dry, smooth and velvety, with a pronounced fruity character Serving recommendation: Ideal with risotto, pasta, dark meat, game, lamb and spicy cheeses.
