The Dry Aged veal comes from young cattle and is a particularly lean and tender meat. We only offer you the highest quality veal from Germany. High demands and high quality standards make the veal something special. We work with a few long-standing partners in Germany. The species-appropriate rearing of calves is the top priority there. For our exclusive Dry Aged products, we rely on quality from Germany. Here, too, farmers produce meat with the highest quality standards.
Raw material
• Only hand-picked heavy calves with good O + musculature or R and U animals
• Slaughter age under 8 months
• Slaughter weights of approx. 180kg
• Roughage-fed calves with dark meat
• Fattened animals with 2 or 3 fat cover
Maturation period
• Premium maturation for over 21 days on the bone
• Maturation in salty air and in special climate chambers
• Ready to Eat upon delivery of cuts
• Gastronomy-friendly cuts without waste from the back of the calf
