Trentingrana is a pure natural product of the highest quality from the heart of the Dolomites. A sweet and mild hard cheese, aged for at least 22 months, made only from milk, rennet and salt!

The D.O.P. cheese Trentingrana is produced in the cooperative dairy with 16 cheese dairies and the milk from over 500 small-scale farmers. Only silage-free raw milk, salt and rennet are used in production - the result is a pure natural product, absolutely GMO-free and without preservatives.

The milk is guaranteed to be obtained from cows kept in species-appropriate conditions at an altitude of over 1,000m above sea level and delivered to the dairy every day. The cheese is produced by hand according to old tradition. Around 500 litres of milk are used for a loaf weighing approx. 36 kg.

Chestnut tagliatelle with pancetta and Trentingrana

INGREDIENTS:

  • 200 g flour 00

  • 70 g chestnut flour  

  • 2 eggs 

  • 70ml milk 

  • 100 g diced bacon  
  • Trentingrana  

PREPARATION: 

In a bowl, mix the 00 flour with the chestnut flour, eggs and milk. Place the mixture on a work surface and continue kneading with your hands for about 10 minutes, then wrap in cling film and let rest for 30 minutes. 

Roll out the dough and prepare the tagliatelle (by hand or with the pasta machine).

Bring plenty of salted water to the boil and cook the pasta for 4-5 minutes. 

In the meantime, fry the pancetta in a hot pan until crispy; Add the pasta to the pan with the bacon.

Serve the tagliatelle with the freshly grated Trentingrana  with a grater with large holes.
