Soak the wooden skewers in water for about 20 minutes to prevent them from burning during grilling.
Cut the chicken breast fillet into uniform cubes and place in a bowl. Press the garlic, finely grate the ginger, and chop the coriander. Add everything together with the brown cane sugar, 2 tbsp fish sauce, and 2 tbsp soy sauce to the meat and mix well.
Let the meat marinate for at least 30 minutes. Then thread the meat cubes onto the wooden skewers and cook in a pan or on the grill until golden brown on all sides.
