Put the quark, whipping cream, and sugar into a blender. Halve the vanilla pod lengthwise, scrape out the seeds with a knife, and add them to the blender as well.

Blend all ingredients thoroughly until a homogeneous, creamy mixture is formed.

Pour the mixture into an ice cream maker and let it run for about 30 minutes. The ice cream can be served directly after preparation in small bowls or waffles.
