Preheat the oven to 195–200 °C top/bottom heat. Line a 12-cup muffin tin with paper liners.

In a large bowl, thoroughly mix oats, whole spelt flour, eggs, cane sugar, water, baking powder, and vanilla extract.

Wash, hull, and dice the fresh strawberries into small pieces. Carefully fold the diced strawberries into the batter.
Chef's tip
For an extra crispy touch, you can sprinkle some additional oats over the muffins before baking.
The muffins can be frozen perfectly and reheated briefly in the oven or microwave when needed.
