Preparation of Poached Egg
Crack an egg into a cup so that the yolk does not break. Bring 1 liter of water with 2 to 3 tbsp white wine vinegar to a boil. Now stir the boiling water with a spoon or whisk to create a small whirlpool in the center of the pot.
Then carefully place the egg into the center of the boiling water whirlpool. The white wine vinegar and the stirring motion cause the egg white to coagulate much better and wrap directly around the yolk, forming a white ball around the yolk.
Let the egg poach for 3 to 5 minutes, then drain on kitchen paper.
Chef's tip
The fresher your eggs are, the greater the likelihood that the yolk and egg white will not mix when cracked. And this is very important for poached eggs.
