Season the chicken breast pieces evenly with herbs de Provence, salt, and pepper.

Heat the rapeseed oil in a large pan over medium to high heat. Sear the chicken for about 6–8 minutes until golden brown. Meanwhile, finely dice the onion and press the garlic.

Remove the cooked chicken from the pan and set aside. In the same pan, sauté the onions and garlic for 2–3 minutes until translucent. Deglaze with the chicken broth and let it simmer for about 2–3 minutes over medium heat.
