Clean the carrots, halve them lengthwise and cut them diagonally into thin slices. Core the bell pepper and cut it into strips approx. 0.5 cm wide. Halve the leek lengthwise and also cut it into 0.5 cm wide strips. Peel and finely chop the ginger and garlic.
Trim the mushroom stems and cut the caps into 1 cm thick slices. Cut the Napa cabbage into 1 cm wide strips. Cut the chicken meat into strips approx. 1 x 6 cm. Clean the celery stalks and cut them diagonally into 0.5 cm thick slices.
Roast the peanuts in a small pan over medium heat, stirring constantly, for approx. 4 minutes until golden brown. Let cool and chop roughly.
