Ingredients

  • 4 pcs. Tortillas
  • 8 pcs. Eggs
  • 150 g Gouda block
  • 1 pc. Avocado
  • 1 pc. Shallot
  • 125 g Baby spinach

Preparation

    Scramble the eggs in a pan with a little salt and pepper. Cut the avocado and shallot into small cubes and coarsely grate the cheese.

    Place a tortilla on a cutting board. Make a cut with a knife from the center of the tortilla to the bottom edge.

    Imagine the tortilla is divided into four quarters. Each quarter is topped with a different ingredient.

    Top the first quarter to the left of the cut with scrambled eggs. Add the avocado cubes and a handful of shallots to the next quarter. Sprinkle the third quarter with grated cheese and place a handful of baby spinach on the last quarter.

    Now fold the tortilla: First, fold the quarter with the egg onto the avocado, then fold both parts onto the cheese, and finally fold onto the spinach to form a compact triangle.

    Fry the folded tortilla in a pan without fat until golden brown on both sides and the cheese has melted. Alternatively, use a contact grill or sandwich maker.
