Ingredients
- 4 pcs. Tortillas
- 8 pcs. Eggs
- 150 g Gouda block
- 1 pc. Avocado
- 1 pc. Shallot
- 125 g Baby spinach
Preparation
- 1Scramble the eggs in a pan with a little salt and pepper. Cut the avocado and shallot into small cubes and coarsely grate the cheese.
- 2Place a tortilla on a cutting board. Make a cut with a knife from the center of the tortilla to the bottom edge.
- 3Imagine the tortilla is divided into four quarters. Each quarter is topped with a different ingredient.
- 4Top the first quarter to the left of the cut with scrambled eggs. Add the avocado cubes and a handful of shallots to the next quarter. Sprinkle the third quarter with grated cheese and place a handful of baby spinach on the last quarter.
- 5Now fold the tortilla: First, fold the quarter with the egg onto the avocado, then fold both parts onto the cheese, and finally fold onto the spinach to form a compact triangle.
- 6Fry the folded tortilla in a pan without fat until golden brown on both sides and the cheese has melted. Alternatively, use a contact grill or sandwich maker.
