Ingredients

  • 500 g pork belly, whole piece
  • 1 tbsp sugar
  • 2 tbsp fish sauce
  • 1 tsp salt
  • 1 pinch black pepper
  • 1 bunch spring onions for garnish
  • 250 g jasmine rice

Preparation

    Melt the sugar with a drop of water in a pan over medium heat until it caramelizes to a golden brown. Add the diced pork belly and season with fish sauce, salt, and pepper. Mix everything well and let it marinate for 30 minutes.

    Sear the meat in the pan for about 8 minutes until it takes on a dark color. Then add enough water to completely cover the meat. Simmer over low heat for about 1 hour until the liquid has almost completely reduced and reached a syrupy consistency.

    Cook the jasmine rice according to package instructions. Serve the caramelized pork belly with the rice and garnish with finely chopped spring onions.
