Ingredients
- 4 pork chops with bone (approx. 250 g each)
- 150 g tomato ketchup
- 100 g liquid honey
- 30 ml balsamic vinegar
- 15 g fresh garlic (peeled)
- 150 ml orange juice (100% direct juice)
- 1 tsp organic orange zest (finely grated)
- 75 ml neutral vegetable oil
- 2 sprigs fresh rosemary
- 10 sprigs fresh thyme
- 1 pinch chili powder
- 1 pinch black pepper (ground)
- 1 pinch sea salt (fine)
- 800 g waxy potatoes (as a side dish)
- 250 g long-grain rice (as a side dish)
Preparation
- 1Preheat the oven to 160 °C top/bottom heat.
- 2Slice the garlic thinly. In a bowl, mix ketchup, honey, orange juice, balsamic vinegar, grated orange zest, garlic, chili powder, and a pinch of salt to form a marinade.
- 3Season the meat generously with salt and pepper on both sides.
- 4Heat the oil in a pan over high heat. Sear the chops until golden brown on all sides (including the fatty side). Place the seared chops in a baking dish.
- 5Tie rosemary and thyme together with kitchen twine and add them to the dish with the meat. Pour the prepared marinade evenly over everything.
- 6Place the dish in the preheated oven for 30 minutes. Then increase the temperature to 180 °C and bake for another 45 minutes, until the meat is tender and the sauce has slightly thickened. Serve with potatoes or rice.
