Ingredients

  • 700 grams Schupfnudeln
  • 650 grams Sauerkraut
  • 100 grams Bacon
  • 1 onion
  • 4 tbsp butter or clarified butter
  • 2 tbsp fresh chopped parsley
  • 2 bay leaves
  • Salt
  • Ground pepper
  • Ground caraway
  • Sugar

Preparation

    Dice the onion.
  • 2
    Dice the bacon as well, or buy it already diced.
  • 3
    Add the butter or clarified butter to a hot pan and sauté the onion until translucent.

    Add the sauerkraut and bay leaves and heat.

    Season the contents of the pan with salt, pepper, sugar, and caraway.

    Ideally, fry the Schupfnudeln in a separate pan with 2 tbsp clarified butter until nicely crispy. Add the 100 grams of bacon and fry until crispy.

    Then mix in the sauerkraut and garnish the whole dish with 2 tbsp fresh, chopped parsley and serve.
Tip
If you have the time: Homemade Schupfnudeln naturally taste even better and can be made from just a few ingredients (potatoes, egg yolk, durum wheat semolina, wheat flour type 405, and nutmeg). For those with a sweet tooth: Schupfnudeln also taste wonderful sprinkled with cinnamon & sugar, apple sauce, or even poppy seeds - hmmmm!
