Ingredients
- 700 grams Schupfnudeln
- 650 grams Sauerkraut
- 100 grams Bacon
- 1 onion
- 4 tbsp butter or clarified butter
- 2 tbsp fresh chopped parsley
- 2 bay leaves
- Salt
- Ground pepper
- Ground caraway
- Sugar
Preparation
- 1Dice the onion.
- 2Dice the bacon as well, or buy it already diced.
- 3Add the butter or clarified butter to a hot pan and sauté the onion until translucent.
- 4Add the sauerkraut and bay leaves and heat.
- 5Season the contents of the pan with salt, pepper, sugar, and caraway.
- 6Ideally, fry the Schupfnudeln in a separate pan with 2 tbsp clarified butter until nicely crispy. Add the 100 grams of bacon and fry until crispy.
- 7Then mix in the sauerkraut and garnish the whole dish with 2 tbsp fresh, chopped parsley and serve.
Tip
If you have the time: Homemade Schupfnudeln naturally taste even better and can be made from just a few ingredients (potatoes, egg yolk, durum wheat semolina, wheat flour type 405, and nutmeg). For those with a sweet tooth: Schupfnudeln also taste wonderful sprinkled with cinnamon & sugar, apple sauce, or even poppy seeds - hmmmm!
