Ingredients
- 8 pcs Chicken wings
- 8 pcs Chicken drumsticks
- 400 ml Dry white wine
- 200 g Organic lemons
- 200 g Fresh garlic
- 20 g Fresh red chili pepper
- 5 g Fresh thyme bunch
- 180 ml Extra virgin olive oil
- 120 ml Red wine vinegar
- 288 g Liquid honey
- 60 ml Soy sauce
- 250 g Organic oranges (for the zest)
- 1 g Ground black pepper
- 5 g Table salt
- 200 g Long-grain rice
Preparation
- 1Wash the lemons thoroughly under warm water and cut into 16 slices. Halve the garlic bulbs lengthwise. Also slice the chili pepper lengthwise.
- 2Halve the chicken wings at the joint. For the drumsticks, cut the meat along the bone and gently open it up. Season everything with salt and pepper.
- 3In a pot or a deep pan, heat the olive oil over medium heat and brown the meat on each side for about 3 minutes until golden.
- 4Increase the heat and add garlic (cut side down), thyme, lemon slices, chili, vinegar, white wine, and orange zest. Let the wine reduce. Then stir in 400 ml water, honey, and soy sauce. Cover and simmer over low heat until the meat is tender.
- 5Meanwhile, cook the long-grain rice according to package directions and serve with the glazed chicken.
Tip
For an even more intense flavor, you can also use boneless chicken thighs. Make sure to use organic lemons and organic oranges, as the peel will be cooked with the dish.
