Ingredients

  • 800 g Carrots
  • 1 tbsp Fresh Thyme
  • 20 g Unsalted Butter
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Lemon Zest
  • 1 pinch Fine Salt
  • 1 pinch Ground Black Pepper

For Serving

  • 100 g Feta Cheese
  • 1 handful Fresh Chives

Preparation

    First, bring salted water to a boil in a large pot and preheat the grill.

    Wash all carrots, remove the ends, and halve them lengthwise. Then add them to the boiling water and cook over medium heat for 8–10 minutes (depending on the size of the carrots). The carrots should still be slightly crisp after cooking.

    After cooking, immediately quench the carrots in a bowl of ice water or under running cold water. Place the prepared carrots on the hot grill and grill intensely for 8–9 minutes. Turn at least once during grilling.

    Meanwhile, prepare the marinade: In a large bowl, mix thyme, butter, oil, lemon zest, salt, and pepper.

    Once the carrots have a nice brown color, remove them from the grill, place them directly into the bowl with the marinade, and mix thoroughly so that they are completely coated. Arrange on a plate, sprinkle with crumbled feta and finely chopped chives, and serve.
Tip
Grilled carrots are an excellent side dish for meat or fish. For a vegan option, you can replace the butter with a plant-based alternative and omit the feta or replace it with vegan feta.
