Ingredients
- 400 g Zucchini
- 1 tbsp extra virgin olive oil (10 ml)
- 25 g Tahini
- 1 clove garlic cloves
- 1 pinch salt

Preparation & Roasting
- 1Preheat the oven to 180 °C. Cut the zucchini into slices about 1 cm thick. Line a baking sheet with baking paper and spread the zucchini slices on it.
- 2Roast the zucchini in the preheated oven for about 40 minutes until soft.
Mixing & Serving
- 1Place the roasted zucchini slices together with the tahini, olive oil, garlic clove, and a pinch of salt in a tall container. Puree everything finely with an immersion blender until a creamy hummus is formed. Season to taste and serve.
Tip
Serve the hummus with fresh vegetable sticks or warm flatbread. A squeeze of lemon juice adds extra freshness to the dip.
