Ingredients
- 200 g The Coconut Collaborative Natural
- 200 g Soy Quark
- 100 g Dates
- 100 g Almond Flour
- 50 g Coconut Flour
- 1/2 tsp Vanilla Extract
- 30 g Vanilla Pudding Powder
- 1 tsp Agar Agar
- 2-3 tbsp Agave Syrup
- 2 Oranges
Dough Preparation
- 1Soak dates in warm water for 2 hours. Then finely grind dates with almond flour, coconut flour, and vanilla extract in a blender and press into a small springform pan (20 cm).
- 2Spread 100 g raspberries over the dough.
Cream Preparation
- 1For the cream, mix The Coconut Collaborative, soy quark, pudding powder, and agave syrup. Taste and add more agave syrup if needed.
- 2Mix agar-agar with a splash of milk and add to the cream. Pour the cream into a saucepan and bring to a brief boil.
- 3Let the cream cool slightly and pour over the dough. Chill for a few hours.
- 4Before serving, peel oranges, slice thinly, and top the cheesecake with them.
