1 Noodles with Zucchini Pesto

Ingredients

  • 1 garlic clove
  • 1 zucchini
  • 30g noodles

Preparation

    Prepare vegetables: Wash zucchini and cut into medium-sized cubes, peel and finely chop garlic clove.

    Add zucchini and garlic to a pan with a spoon of rapeseed or olive oil and sauté over medium heat. Stir well constantly so that the ingredients do not burn.

    Meanwhile, fill a small pot with water and add the noodles as soon as the water boils.

    Once the noodles are cooked, purée the sautéed zucchini with the garlic and mix the resulting pesto with the cooked noodles.

    Cooking the noodles and sautéing the vegetables happen simultaneously, so the dish is ready very quickly.

    If there is too much pesto for the noodles, it can be frozen for another portion (without noodles, just pesto).
