Ingredients
- 150g Edamame, blanched
- 1 Carrot
- 100g Red Cabbage
- ½ Cucumber
- 2 tbsp roasted peanuts
- A handful fresh cilantro
Ingredients for the Dressing
- 1 tbsp soy sauce
- 2 tbsp peanut butter
- 1 tbsp lime juice
- 1 tsp honey (or agave syrup)
- 1 tbsp sesame oil
- 2 tbsp water
Preparation
- 1Cut the carrot into fine strips, shred the red cabbage into fine shavings, slice the cucumber thinly.
- 2In a bowl, mix peanut butter with soy sauce, lime juice, honey, sesame oil, and water until a smooth sauce forms.
- 3Place edamame, carrot, red cabbage, and cucumber into a large bowl.
- 4Pour the dressing over and mix well.
- 5Roughly chop peanuts and cilantro and sprinkle over before serving.
