Ingredients

  • 150g Edamame, blanched
  • 1 Carrot
  • 100g Red Cabbage
  • ½ Cucumber
  • 2 tbsp roasted peanuts
  • A handful fresh cilantro

Ingredients for the Dressing

  • 1 tbsp soy sauce
  • 2 tbsp peanut butter
  • 1 tbsp lime juice
  • 1 tsp honey (or agave syrup)
  •  1 tbsp sesame oil
  •  2 tbsp water

Preparation

    Cut the carrot into fine strips, shred the red cabbage into fine shavings, slice the cucumber thinly.

    In a bowl, mix peanut butter with soy sauce, lime juice, honey, sesame oil, and water until a smooth sauce forms.

    Place edamame, carrot, red cabbage, and cucumber into a large bowl.

    Pour the dressing over and mix well.

    Roughly chop peanuts and cilantro and sprinkle over before serving.
