Ingredients
- 8 Eggs
- 4 Tomatoes
- 2 Red Bell Peppers
- 500 grams Feta
- 2 Red Onions
- 2 tbsp Olive Oil
- 4 tbsp Tomato Paste
- 2 tbsp Oregano
- 160 grams rustic wheat bread
- Salt
- Ground Pepper
Preparation
- 1Cut tomatoes, bell pepper, and onion into small cubes.
- 2Heat olive oil in a pan to sauté the onions. Add bell pepper and fry briefly. Then add the tomatoes and tomato paste. Season with oregano, salt, and pepper and transfer to a bowl. Finely crumble one half of the feta and coarsely crumble the other half, then set aside.
- 3Add eggs to the already emptied pan and let them set slightly. Now spread the vegetables over the eggs and sprinkle the crumbled feta on top. Cover the pan to let the feta melt.
- 4Finally, sprinkle everything with oregano, serve in the pan with rustic wheat bread.
