Ingredients

  • 1 onion (with peel)
  • 2 garlic cloves
  • 2 bay leaves
  • 4 allspice berries
  • 1.5 l cold water
  • Salt to taste

Preparation

    Thoroughly wash the vegetable scraps. Halve the onion.

    Place vegetables, spices, and herbs in a pot and cover with cold water.

    Add salt, bring to a boil, then reduce heat to a minimum.
  • 4
    Simmer gently for at least 60–90 minutes, ideally longer for maximum flavor.
  • 5
    Strain the finished broth through a fine sieve.
